Tuna Steak with Mango and Pomegranate Salsa

Serves One
Ingredients
- 1 medium tuna steak
- Juice of 2 limes
- 2cm of grated ginger
- 2 finely chopped green chillies
- A small handful of chopped fresh coriander
- 1 tsp of olive oil
Method
Place the tuna steak into a small freezer bag with the juice of the two limes, olive oil, grated ginger, chopped chillies and coriander. Gently massage into the tuna and allow to marinade for 10 – 15 minutes.
Sear the tuna in a hot pan for approximately 2 minutes on each side.
Mango and Pomegranate Salsa
Ingredients
- 2 chopped plum tomatoes
- 2 finely chopped spring onions
- 1 chopped red or green chilli
- 1/2 chopped mango plus a little mango juice or puree if available
- 1/2 freshly squeezed lemon
- 100g of pomegranate seeds
- A small handful of chopped fresh corriander
Method
Mix all the above ingredients together to make a beautiful salsa to serve with the tuna steak.
