Aazam’s tip: The sparkling water helps to keep the batter perfectly light.

Serves 2-3

Ingredients

  • Selection of finely chopped vegetables,
  • for example:
  • Baby courgettes
  • Baby sweetcorn
  • Red peppers
  • Asparagus

Alternatively substitute the vegetables with 500g of fresh, shelled, raw, de-veined king prawns.

Batter

  • 1 cup of self raising flour
  • 1 egg
  • 7 fl oz sparkling water
  • 1 litre of vegetable oil for frying

Method

Whisk the flour, egg and sparkling water to a medium consistency. Slice the vegetables or prawns and coat with the batter mix. Heat the oil in a wok. When it is hot, drop in the vegetables or prawns. Fry until golden brown (about 4-5 minutes). Drain on kitchen paper and serve.

N.B. Remember to only half fill your frying utensil to prevent any accidents when frying.
