Aazam says: “The secret to this dish is to use only fresh ingredients and keep it simple.”
Aazam’s tip: The sparkling water helps to keep the batter perfectly light.
Serves 2-3
Ingredients
- Selection of finely chopped vegetables,
- for example:

- Baby sweetcorn
- Red peppers
- Asparagus
Alternatively substitute the vegetables with 500g of fresh, shelled, raw, de-veined king prawns.
Batter
- 1 cup of self raising flour
- 1 egg
- 7 fl oz sparkling water
- 1 litre of vegetable oil for frying
Method
Whisk the flour, egg and sparkling water to a medium consistency. Slice the vegetables or prawns and coat with the batter mix. Heat the oil in a wok. When it is hot, drop in the vegetables or prawns. Fry until golden brown (about 4-5 minutes). Drain on kitchen paper and serve.
N.B. Remember to only half fill your frying utensil to prevent any accidents when frying.
