Swordfish with mango and paw-paw

Aazam’s Tip: When starting to cook this dish, make sure you have all the ingredients at hand as the cooking process is very quick and it is important not to overcook the swordfish.

Serves two


  • 2 medium swordfish steaks
  • 1/2 a mango, peeled and chopped into large chunks
  • 1/2 a fresh paw paw, peeled and chopped into large chunks
  • 1 finely chopped medium onion
  • 2 finely chopped green chillies
  • 3 finely fresh plum tomatoes
  • 7 fl oz mango juice
  • 7 fl oz mango puree
  • Seasoning
  • A small handful of fresh chopped coriander
  • 2 tbsp of corn oil


Season the swordfish and cook on a hot griddle pan with a little oil, for 3 minutes on each side.

Meanwhile, fry the onions until golden brown, then add the tomatoes and heat gently. Add the chopped fresh green chillies, cook a little further and then add the mango juice and puree. Bring to the boil and reduce by a third. Add the fresh mango and paw paw and then sprinkle with the chopped coriander.

Serve hot over the swordfish steak and enjoy. This dish could be accompanied with rice or salad, or is delicious by itself.
