Ingredients
- 8oz salmon fillet cut into 1 inch pieces
- 8 spears of chopped asparagus
- 1/2 sliced onion
- 1 litre of vegetable oil for frying
Batter
- 8oz gram flour (ground chick peas)
- 1/2 teaspoon of baking powder
- Pinch of salt
- 1 tsp of chilli flakes
- 7 fl oz cold sparkling water
Method
Mix the dry ingredients including the spices in a bowl. Then add the salmon pieces, onion and asparagus. Stir to coat with the flour mixture, and then add the sparkling water, this will keep the batter perfectly light.
Heat the oil in a pan. Gently deep fry heaped tablespoons of the mixture for 2 – 3 minutes until golden brown. Remove and drain on a kitchen towel.
Serve with raita or mango chutney.
N.B. Remember to only half fill your frying utenstil to prevent any accidents when frying.
