Fresh Raspberry Tart

Aazam says: “I love puddings!”


  • 225g puff pastry or ready rolled
  • flour for dusting surface
  • 150 ml whipping cream or double cream
  • 200g Raspberries (leave a third for decoration)
  • Flaked almonds (optional)

Frangipane mix

  • 100g unsalted butter
  • 2 eggs
  • 10g flour
  • 100g castor sugar
  • 100g ground almonds


Cream the butter and sugar and gradually beat in the eggs. Mix in the flour and almonds lightly.

Line a small flan ring using the puff pastry (yes puff pastry) and spread the fresh raspberries or raspberry jam and spread the almond frangipane on top.

Place the raspberries in a nice way on top along with the flaked almonds.

Bake in a moderate oven (200 – 230C) for 30 – 40 minutes.

Dust with icing sugar and serve with whipped cream
